Rob was already cooking up his homemade spaghetti and meatballs last night when our good friends/neighbors invited us over for homemade spaghetti and meatballs (oh, the irony!)…
So… what would you do in a situation like that?
Here’s what WE do… we have a Meatball Challenge!
We had a little later start cooking than our competitor, but they were kind enough to wait until we were ready. When we arrived at their house, I noticed that the recipe Janice was using was directly from one of my favorite cookbooks…
I immediately thought we were going to be the losers in this challenge, because Ree Drummond, aka The Pioneer Woman, is an amazing cook… emphasis on A-M-A-Z-I-N-G. She even has her own cooking show on the Food Network!
(Just in case you didn’t know)
Plus, I had purchased Vegetable Spaghetti to go with our meatballs… Rob was certain we would lose because of that. I can’t help it… I actually like vegetable pasta… healthy AND delicious!
Here’s my plate…
In the left corner… Rob’s homemade, no actual recipe, meatballs with vegetable spaghetti.
In the right corner… Janice’s version of The Pioneer Woman’s Rigatoni and Meatballs.
Unfortunately, this is the only picture I took during the meal. I was too busy eating all the food on my plate and watching the other adults to see their reactions to the different entrees.
In the end… the decision was unanimous… Rob’s meatballs were the winner!!

While we were waiting to pick up Connor yesterday, we decided to stop in Ft. Smith and partake in a late lunch/early dinner at La Huerta’s. We had never been here before, but I can say we will be back. The food was wonderful and the staff so friendly! If you’re ever in Ft. Smith, Arkansas, you must eat here!
Yesterday, we left early to pick Connor up from Spring Break. We decided to brave the frigid temperatures and the snow to hike a part of Arkansas that we’ve never ventured into before… Devil’s Den State Park. We hiked the “Yellow Trail”. Right at the trailhead is this fast moving creek/river that flows into Devil’s Lake. The dogs were exhausted after the adventure!
I’ve been sick, possibly with the flu, so I’ve gotten behind in this photo project… to catch up, here is one new and 2 slightly older pictures I’ve given the “Instagram” treatment.
I’ve wanted these boots for months now… thanks to a nice coupon and our tax return, I was able to order them last Saturday. They arrived Wednesday and I must say I was very disappointed at the craftsmanship. The right boot was absolutely perfect, but the black stitching on the left was so off that the leather was coming up from the leopard inlay part. You can barely see it in the picture. I returned them to the store today and they reordered them for me. Hopefully I’ll have them by next Wednesday and hopefully they’ll both be perfect!
This is me WAY back in the day. That’s my first kitten named Sparkle. I’m not sure how old I am here. I loved that dress! Sparkle was such a great cat…
This is Connor and Oscar. Oscar was my in-law’s bull terrier before their current one Jackson, which I’ll post about tomorrow. Oscar was the very first bull terrier I ever met in person and he certainly sealed the deal for me as far as bull terriers are concerned (there are 2 in my house now!). He passed away a few years ago of a heart attack, he was more than 10 years old! We loved him dearly.
