Today wasn’t near as busy as yesterday, thank goodness!  We did have a bunch of pesky visitors at our front door…

Have I mentioned how much I loathe these tumbleweed things?  They are so terribly annoying.  They’re impossible to sweep up, the slightest wind blows them inside any open door, I have even found one around the corner and down the hall in Connor’s bathroom!  The only way I’ve found to get rid of them is to physically pick them up and carry them to the trashcan.  Sounds like a job for Connor, right?

Today was so incredibly busy and I took so many pictures, I couldn’t choose just one for the day.  So… here’s 3!

First, breakfast at Ingrid’s Kitchen in Oklahoma City.  This restaurant is so good!  It is becoming a tradition for the Hubs and me to fill up on their delicious breakfast foods and pastries, then go do this…

This is the second time we’ve gone on a Saturday to give blood here.   Apparently, my blood type is very rare (AB+).  The folks at the donor center keep asking me to come back and give platelets.  I’d like to, but I’ve heard it takes about 2 hours.  I’d have to plan a whole day around that.
After giving blood, the Kid and I went here…

Ada, Oklahoma… an hour and a half away… for soccer in the rain!  This is Connor at half-time trying to warm up by running laps.  It rained the entire first half.  Thankfully, it stopped during half-time, but it remained windy and cold!  It’s a surprise we didn’t have any sick kiddos afterwards.  They ended up tying the game 4-4.
When we got home, it was time for Razorback football!  We lost to Texas A&M, but it was a fun game to watch!
See, told you it was a busy Saturday!

…my very, very favorite dish…
Poppy Seed Chicken!! 
(I’m pretty sure I’ve featured this entree on here before… if not, here it is again!)
I was going to post a link to the recipe, but it has been deleted and the original source is unknown (sorry!)… thankfully, I had copied it down a long time ago.  Here it is…
Ingredients:
5 cups canned chicken
1 cup sour cream
2 cans condensed cream of chicken soup
2 cups crushed Ritz crackers (about 1 1/2 rolls of crackers)
1/2 cup melted butter
1 Tablespoon Poppy Seeds
Directions:
1. Preheat oven to 350 degrees.
2. In large bowl, combine sour cream and cream of chicken soup until well mixed, add chicken.
3. Spread chicken mixture in the bottom of a 9×13-inch casserole dish.
4. In medium sized bowl, crush Ritz crackers and stir in melted butter.
5. Sprinkle crackers over top of chicken mixture.
6. Top with Poppy Seeds
7. Bake for 30 minutes until the top of the casserole is brown and the sauce is bubbly.
8. Serve plain or over rice.
This is so quick and easy to throw together.  When Connor saw what I was making, he actually cheered!
 I did make one substitution, I used Oikos Plain Greek Yogurt instead of sour cream. This is the first time I’ve ever cooked with yogurt. I actually like it better than the sour cream!  Try it and let me know what you think.

Throwback Thursday!!  
This was taken at my grandparents’ house in Hope, Arkansas when Connor was 2 years old… before his first haircut.  Look at those curls!  This was the day he was mistaken for a girl at a local restaurant.  His shirt has tools on it…a girl?  Really?  
To his mother’s dismay, Connor’s curly locks were cut off shortly after this was taken.
