I realized tonight that it’s been a very long time since I’ve posted a recipe…the reason…I haven’t cooked anything new! I’ve found several recipes that have been big hits with the family and haven’t had room to add something new to the rotation.
Tonight’s meal is a variation on an old favorite. I’ve made Easy Mexican Casserole before and we love it! The only thing I did differently this time…I added different types of peppers that were left over from a previous dish.
Here are the ingredients:
1 lb. ground beef
1 small onion, chopped
1 red pepper, chopped
1 yellow pepper, chopped
1 can Ro-Tel Tomatoes
1 envelope Taco Seasoning
1 can Cream of Chicken Soup
1/2 cup water
Tortilla Chips
Shredded Cheddar Cheese
Sour Cream
Here’s how you make it: 1. Brown the ground beef and drain off the fat. We actually drain the fat off into the dogs’ food bowl… let it cool off and let them go to town! They love it!
2. Add onions, red and yellow peppers, Ro-Tel tomatoes, taco seasoning, soup and water. Stir to combine and heat thoroughly.
3. Spray a 9×13 casserole dish with cooking spray, then fill the bottom with a thin layer of crushed tortilla chips.
4. Spoon meat mixture on top of the chips and add a layer of shredded cheese.
5. Repeat layers.6. Cover with aluminum foil and bake for 25 minutes in a 325 degree oven.
7. Once bubbly and the cheese is melted, remove from oven and let stand for 5 minutes.
8. Serve topped with sour cream.
This was so incredibly good! Everyone had 2 helpings and there is plenty left over for my lunch tomorrow!
