…Italian Roast Beef! This is one of Connor’s most favorite meals and I am happy to make it for him. I prepped this last night and started it cooking before I left for work this morning. By the time everyone got home, it was ready to eat!
Here are the ingredients:
3 to 4 lb. roast beef
Small red potatoes, quartered
Baby Carrots
1 envelope brown gravy mix
1 envelope Italian Dressing mix
1 envelope Ranch Dressing mix
½ cup water
Directions:
Quarter enough potatoes to fill the bottom of a large quart crock pot.
Add as many carrots as you think you’re brood will eat and enough to cover the bottom of the crock pot.
Put roast beef on top.
Sprinkle brown gravy, Italian dressing and ranch dressing mixes over the meat.
Pour ½ cup water into crock pot.
It should now look like this…
Cook on low for 8 hours. The meat should be falling apart and the vegetables should be tender once the 8 hours are up.
Serve with steamed broccoli and whole kernel corn. Yummy!
For added flavor, chop up some onions to go with the potatoes and carrots, or even some green bell peppers would taste good!
Until next time…
