We had a busy weekend! After breakfast at Chick-fil-a and a pit stop at Starbucks where Connor tried a Vanilla Macchiato for the very first time…
(he approves) we headed to the sports store for some new soccer cleats. Connor has been wearing the same pair for well over a year now, so it’s time. I’m surprised his toes haven’t poked a hole through the front yet!
We decided on these…
…but the store was out of his size… 10.5!! He’s not even 14 yet and has a 10.5 foot! We ended up ordering them and hopefully they’ll be here by Wednesday. Only one more practice in his old ones!
After that exciting adventure, we headed down the street to Hobby Lobby. When Connor dropped band, the school enrolled him in “Skills for Living”. Back in my day, it was called “Home Ec”, my how times have changed! This semester, the students are sewing sleep shorts and we needed to purchase material and elastic. Out of the hundreds and hundreds of cotton fabric options, which does my son choose?
Yep… a soccer print. Surprise, surprise.
Once we got home, Rob and I headed out again…no rest for the weary. We needed new hummingbird feeders, mulch for the front flower beds, water filter for the fridge and fixin’s for dinner. After all that was accomplished, I did laundry while Rob put out the mulch.
Next up… soccer practice! Rob grilled up some filets and burgers in the meantime so that dinner was waiting for us when we got home.
And, that was Saturday! Whew! Makes me tired reliving it in my head!
On Sunday, we went to church, took the dogs to the park, Connor had a late afternoon soccer game…
…his team won 2 to 1! The rumor is, the team they played went undefeated last season!
We walked the dogs once more around the block, then it was time for bed.
Finally, I surpassed all my Fitbit goals for the day!!
Let’s see if I do it again today… probably not, but I can try!
And this is what we ate tonight…
Rob’s Italian Chicken Stir Fry…weird title, right? But oh, so delicious!
Ingredients:
3-4 boneless, skinless chicken breasts (I usually buy the trimmed and ready, thin kind)
1 small bottle of Italian dressing
Baby or Petite Carrots
1 green bell pepper
1 red bell pepper
1 yellow bell pepper
1 small onion
Fresh broccoli
Soy sauce
Directions:
The night before, place raw, unfrozen chicken breasts in a Ziploc bag and dump the entire bottle of Italian dressing over it (I typically punch holes in the chicken with a fork beforehand to allow the dressing to get inside the meat), Let it marinate over night in the fridge.
The next day, place marinated chicken breasts on a cookie sheet and bake at 350 degrees for 20 minutes.
Chop up the peppers and onions and steam them, along with the broccoli, carrots and a little butter, in the microwave for 4 minutes. Then toss in a skillet over low to medium heat with a little soy sauce.
Remove chicken from oven and cut into bite-sized pieces.
Add chicken pieces to the skillet and stir into the vegetables.
Serve and enjoy! Connor can’t get enough of this dish…and we can’t make enough! We have it a least once every two weeks.
After dinner, we watched this…
…yes, I forced my nearly 14 year old son to watch an animated musical and of course, he loved it! As did I! “Let it go! Let it go-o-o!”
