Here’s a new recipe for you! I found this one a couple weeks ago while searching for “simple, healthy meals” on Pinterest. It’s called Cheesy Honey Mustard Chicken and it combines two of my 3 favorite foods: cheese and chicken.
Cheesy Honey Mustard Chicken
4 boneless chicken breasts (I used the Breast Tenderloins from Pilgrim’s)
¾ cup honey
½ cup Dijon Mustard (I used brown mustard)
1 tsp lemon juice (not in above picture, it was camera shy and failed to come out of the refrigerator)
½ tsp paprika
Lemon pepper to taste (totally didn’t see this when I went grocery shopping…I just used plain black pepper)
4 tbsp bacon, cooked and chopped (just like the original author, I used Oscar Meyer bacon bits)
1 cup shredded mozzarella cheese
1. Preheat oven to 375 degrees.
2. Once you’ve trimmed out all the nasty white ligament things from the chicken tenderloins, season them with lemon pepper (or in my case, black pepper). Place in 9×13 baking dish.
3. Combine honey, mustard, lemon juice and paprika. Pour over chicken. Bake for 20-25 minutes.
4. Top each chicken breast with 1 tablespoon bacon (bits) and ¼ cup mozzarella cheese (or, if you’re using the tenderloins, just sprinkle the bacon and cheese over the whole dish). Continue to bake until cheese is starting to brown (about 10 minutes).
5. Serve and enjoy!
Yep…I’m totally that mom that didn’t serve any vegetables tonight. Broccoli somehow omitted itself from my grocery list; therefore, it didn’t get purchased. Much to my dismay!
What’s the verdict from the husband and picky teenager? I’ll just say that there are no leftovers!

I was watching some really pretty, storm looking clouds roll in while at work this afternoon and noticed this single bird perched on the power line. The bird, with the clouds in the background made for an interesting shot, in my opinion. I appropriately entitled it “Bird on a Wire”.
