Two posts today!! Aren’t you lucky? I’m trying to play catch-up…

I wanted something quick tonight for The Kid’s last meal with us before he goes to his dad’s for the summer. I’ve made this numerous times in the past, I’ve probably even blogged about it… but, you’re getting it again. You’re welcome. It’s one of The Kid’s favorites…

Taco Salad

Taco Salad

1 lb. ground beef
Taco Seasoning
¾ cup water
Onion, chopped
Green pepper, chopped
Tomato, chopped
Lettuce, shredded
Tortilla chips
Shredded cheese
Sour cream

1. Brown ground beef, drain
2. Add taco seasoning and water according to package directions.
3. Stir in chopped onion, green pepper and tomato and heat thoroughly.
4. Place tortilla chips (I like to crush them up first) on plate and layer lettuce, meat mixture, shredded cheese and other ingredients.

Unfortunately, I can’t eat this right now, but The Kid loves it. He’ll have two or three servings. He likes to put the salad together himself. When I first started making this, I would leave out the onion and green pepper. I would offer them as garnishment, but I noticed The Kid was skipping it…so, I started adding it into the meat. I’m so sneaky! He needs those vegetables. I can’t wait till July when I can eat this again!
