We had the best weekend! On Saturday we went to Lake Thunderbird with our neighbors/best friends and rode around on their beautiful pontoon boat! Here are a few pictures from the gorgeous day…

Sunday morning, The Hubs, The Kid and I went to the donut shop for breakfast before church. I don’t usually tag along with them on this little adventure, but I was actually ready in time yesterday, which rarely happens.

On Tonight’s Plate… Crispy Onion Chicken from Six Sister’s Stuff
I’m always on the lookout for quick, simple recipes to whip up for the family and since Connor is with us for another week (WooHoo!!!), I thought this dish looked like something he would eat and… it’s only 3 ingredients!

Crispy Onion Chicken

Ingredients:
4 boneless, skinless chicken breasts
3/4 cup honey mustard
2 cups French’s French Fried Onions, crushed (I only used one 6 ounce container)

Directions:
1. Preheat oven to 375 degrees.
2. Dip each chicken breast in honey mustard then coat in crushed french fried onions. (I placed the raw chicken in a large bowl, squirted honey mustard sauce on top and tossed to coat.  I then threw in the crushed french fried onions (minus the few I ate) and tossed again to make sure each chicken tender was covered)

3. Place on a baking pan lined with foil and sprayed with nonstick cooking spray.

4. Cook for 30-35 minutes, or until cooked through.
