I’ve made tonight’s meal before, but apparently I’ve never put the recipe on here… I’m such a bad blogger!

I would like to apologize now for the lack of pictures…it’s been kind of stressful around here the last couple days. AT&T U-Verse internet is CRAP!!! It says we’re connected, but, nope…it’s totally lying to us! So, we canceled them tonight and we’ll have to wait until Monday before Cox can get us set up. How can one blog without wireless internet??? Fortunately I have a hotspot for work. But, it’s a pain!  Therefore, blogging might be sparse this week…sorry!

We’re having Crock Pot Beef Tips tonight…Yum!

Crock Pot Peek Beef Tips

Ingredients:
2 lbs. beef tenderloin tips or cubed stew meat
10.5 oz. can cream of mushroom soup
1 packet brown gravy mix
1 packet onion soup mix
1 cup water

Directions:
1. Place meat in bottom of a crock pot.Beef Tips
2. In a large bowl, mix the soup, dry mixes and water until well combined, pour over the meat in the crock pot.

3. Cook on low for 8-9 hours. Do not remove the lid…not at all the entire cooking time. You’ll regret it if you do! Not really…nothing will happen if you take a little peek.
4. Serve over mashed potatoes (or noodles or rice, whatever floats your boat)

The Hubs said the meat was juicy and tender. I love this quick meal. I prepared the meat and sauce the night before and left it in the fridge to marinate. I turned the crock pot on before I left for work and it was good and cooked by the time I got home. The Kid likes this dish, too…so, its teenager approved.

I’m not superstitious, so… HAPPY FRIDAY THE 13th! How was your week? Mine was long and boring. I’m so ready for the weekend… we’re having some friends over for a cook out… should be tons of fun!

Throwback Thursday…

This Sunday is Father’s Day…and I’m dedicating today’s Throwback Thursday post to my Daddy. My father told me one time that his most favorite word of all time is “Daddy”. So, no matter how old I get, I will always call him that.

My sister and I had the best childhood. We were raised on a dairy farm with nearly all of our dad’s family as our neighbors. Our Dad milked those beautiful cows twice a day for at least a quarter of a century, starting when he took over the operation from his dad. He woke up to go milk around 3am and went out again at 3pm. We were fortunate enough to have him home a lot of the time. Mom was able to stay home with us, too, so it was like having both parents around all the time… it was wonderful!

My Daddy is such a fighter. He has battled heart issues since birth and has had several open-heart surgeries over the years. Nearly five years ago on July 27th, 2009, he had a heart transplant and has been going strong ever since.

Making Plans…

The flight has been booked, the tickets purchased and reservations made! The Hubs and I are taking a trip! An actual bonafide VACATION! I’m so excited! I just wish it worked out that The Kid could join us. I know he’s having a good time at his dad’s. He called last night talking about how tan he is! I sure do miss him!

Back to our plans… we’re heading to Chicago to do something The Hubs has always wanted to do… watch the St. Louis Cardinals play here…
Wrigley
I’m not nearly as big a baseball fan as The Hubs, but I must admit…I’ve always wanted to see Wrigley Field in person. The history of that venue is so amazing… read more about it HERE. The Cardinals/Cubs rivalry is unreal and tickets sell out super fast. I am so happy we were able to get tickets for the game!

We are meeting one of The Hubs’ college friends and his family there to explore the Windy City and have copious amounts of fun.

In addition to the ballgame, we’re planning to go here…

While The Hubs, his friend and I are at the game, Friend’s wife and girls are going here…

The Hubs and I are not real big fans of amusement parks and Friend’s wife and girls are not big fans of baseball, so it works out great that we’re doing things separately that afternoon.

The Hubs and I are going here for a romantic dinner one night…
RPM
…I’ve already made reservations! RPM Italian is owned by The Apprentice’s original winner, Bill Rancic and his wife, E! News anchor Giuliana. I’m hoping they’ll be visiting the restaurant the day we’re there…I would love to meet them! Many moons ago, when I was studying for my degree in Mass Communications with an emphasis in Broadcast Journalism, my dream was to graduate, move out to Los Angeles or even New York City to pursue a career in entertainment reporting…but, life happened. I got married (the first time) and had The Kid, so I was content working behind the scenes as a News Producer for the ABC and NBC affiliates in Little Rock for several years and then later on (a couple years after the divorce) co-anchoring our small local cable news program with The Hubs (who was just The Boyfriend at that time). Since my life got side-tracked and I wasn’t able to accomplish my plans of going to Hollywood, I’ve followed Giuliana Rancic’s career and lived vicariously through her.

She has the job I’ve always wanted! Maybe someday I can walk the red carpet and interview celebrities! Or even co-host E! News! It’s highly doubtful, but a girl can wish!
