Sorry I’ve been M.I.A. Between getting things ready for my in-laws’ visit 4th of July weekend, recovering from the holiday and finishing up 2 copy-editing projects, in addition to my full-time job, I didn’t have the time or the energy to give my little space here on the internet the attention it deserves. Don’t you feel like that sometimes? You want to sit down and write, but if it’s not your best effort you feel like you’re doing the blog a disservice? That was me the last several days. I didn’t want to post something just to post something, so I didn’t post anything! I’m not fond of half hearted attempts.

Now that all that is out of the way… here’s what I cooked up tonight!

I actually tried my hand at creating a recipe for The Hubs and me. I wanted something simple and small in portion size. I love pasta and Parmesan chicken, so here is what I came up with…

Baked Chicken Parmesan Spaghetti for Two

Baked Parmesan Chicken Spaghetti

2 large cans cooked/cubed chicken
Italian seasoned bread crumbs
¼ cup grated Parmesan cheese
2 eggs, beaten
Shredded mozzarella cheese
1/2 jar Marinara Sauce
Angel Hair Pasta

1. Cook pasta according to package directions.
2. Drain and stir in jar of marinara sauce. Set aside.

3. Beat the eggs with a fork in a small mixing bowl.
4. In another bowl, combine bread crumbs and Parmesan cheese.
5. Place cubed chicken in the eggs and stir to coat.

6. Move chicken to bowl with the bread crumb mixture. Stir to coat.

7. Gently (so as to not lose the bread coating) toss 1/2 the breaded chicken mixture with the pasta.

8. Put pasta in a 9X9 baking dish sprayed with non-stick cooking spray and spread remaining chicken mixture over the top.

9. Cover with aluminum foil and bake for 25 minutes in a 350 degree oven.
10. Remove foil, sprinkle on mozzarella cheese and bake, uncovered, for 10 more minutes until edges are brown and cheese is melted.

I really enjoyed this meal and so did The Hubs. I think The Kid will also like it. Next time I will probably add some green or yellow peppers to include more vegetables. I like the smaller size of this recipe, less leftovers. I’m all about meals for 2 (or 3)!
