I wanted something quick and easy tonight and something a little more on the healthy side.  I’ve made this before, but realized that I’ve never put the recipe up on here. I’m remedying that right now…
Baked Salsa Chicken

Baked Salsa Chicken
Ingredients: 

Boneless/Skinless chicken breasts (I get the “Trimmed and Ready, Thin” kind)
Chunky mild salsa
Tortilla Chips
Shredded Cheddar Cheese

Directions:
Place thawed chicken breasts on a baking sheet lined with aluminum foil and spoon salsa over the top.

Bake in a 400 degree oven for 20 minutes or until chicken is cooked through.
Baked Salsa Chicken
Crumble tortilla chips over the chicken, then top with shredded cheese.

Bake for about 5 more minutes until the cheese has melted.
