I wanted to make something tonight that could provide some extra leftovers this week. The Hubs wants to start taking his lunch to work instead of eating out every day and spending unnecessary money. So, here is a dish that will stay fresh for a couple days and heat up nicely in the office microwave…

Chicken Tetrazzini

Ingredients:
16 oz. spaghetti, cooked as instructed on package
1/4 cup butter
2 large cans cubed chicken
2 cans cream of chicken soup
2 cups sour cream
1/2 cup chicken stock (or vegetable stock or cooking wine)
1 tsp Kosher salt
1/2 tsp black pepper
2 TBSP Parmesan cheese
2 cups shredded mozzarella cheese

Directions:
1. In a large mixing bowl, combine butter, chicken, soup, sour cream, salt, pepper and stock
2. Add cooked pasta and toss well to coat
3. Pour into a buttered 9×13 inch baking dish
4. Sprinkle cheeses on top
5. Cover with foil and bake in a 300 degree oven for 55 minutes
6. Remove foil and bake for 15 more minutes

This was so creamy and delicious.  The Kid liked it so much, I was worried there wouldn’t be any leftovers for The Hubs! Try it and let me know how you like it!
