I gave the smoked sausage the night off to make this delicious baked chicken dish…

4 thin chicken breasts
6 slices Pepper Jack cheese
1 can Cream of Chicken soup
¼ cup milk
Stove Top Stuffing
¼ cup butter

1. Lay chicken in the bottom of a glass baking dish
2. Place Pepper Jack cheese slices over the chicken
3. In a separate bowl, mix Cream of Chicken soup and milk
4. Pour mixture over chicken
5. Top with Stove Top Stuffing
6. Drizzle ¼ cup melted butter over top
7. Bake at 350 degrees for 45 – 60 minutes
8. Serve over cooked white rice

Easy and tasty! I’ll have to make this again when The Kid gets home from Spring Break… he’ll love it!
