On the nights The Kid has a soccer game, I want to make something quick and healthy… I found this recipe and it was okay, not a huge hit, but eatable.

Chicken Casserole

Ingredients:
3 cups cubed chicken (2 large cans)
¾ cup shredded cheddar
1 (10-3/4 oz) can cream of chicken soup (use the lower sodium version for a healthier option)
¼ cup milk
1 cup chopped red bell pepper
¼ cup chopped celery
¼ tsp pepper
¼ cup low-sodium crushed cornflakes (I actually found a box of pre-crushed cornflake topping…super easy!)

Directions:
1. Pre-heat oven to 400 degrees
2. Coat a 2 quart casserole dish with cooking spray
. In a large bowl, stir together chicken, cheese, soup, milk, bell pepper, celery and pepper
4. Pour into prepared casserole dish
5. Sprinkle cornflakes over chicken mixture
6. Bake, uncovered, about 30 minutes, or until heated through
7. Let stand 10 minutes before serving

Again, this was just okay…I probably won’t make it again.  I’ll need to find a better tasting chicken casserole.  Any suggestions?
