Wow! It’s been a hot minute since I’ve posted a blog… so sorry! No excuses…just call me a lazy blogger.

Since it’s been almost a year, I figured I’d re-start my blog with a recipe! This is simple and delicious (just like I like my recipes!)


Ingredients:

8 oz. bag pasta (I accidently purchased a 16 oz. bag and used all of it…it was too much pasta)
1 lb. lean ground beef
½ cup diced onion
1 jar pasta sauce (I used Prego Marinara Sauce]
Fresh spinach leaves
15 oz. part skim ricotta
¾ teaspoon garlic powder
1 ¼ cup shredded mozzarella cheese

Directions:
1. Pre-heat oven to 375 degrees
2. Cook pasta according to package directions, set aside
3. Sauté onion and garlic powder in large skillet
4. Add ground beef, brown and drain
5. Stir in pasta sauce
6. Pour meat/sauce mixture into the pot with the cooked pasta and stir to combine
7. Spray a 9”x 13” baking dish with cooking spry
8. Add about half the pasta/meat mixture to the pan, spreading evenly
9. Spoon ricotta over the meat, spreading evenly

10. Add a layer of spinach leaves

11. Spread rest of meat mixture over the top
12. Sprinkle with mozzarella cheese
13. Bake for about 30 minutes, or until dish is bubbly and cheese is slightly brown

This is so good… it sincerely tastes like lasagna without the giant noodles!
